It's a low-growing tropical herbaceous plant that forms many long, thin rhizomes. Familiar to the contemporary world as a prime component of curry powder, it was probably grown at first to be turned into a dye and then became valued both as a condiment and for its usage in cosmetics.
Ingredients:
• 1 tbsp olive oil
• 1 medium yellow onion, chopped (approx. 1 cup)
• 3 garlic cloves, minced
• 2 tbsp sage, chopped
• 4 cups water or vegetable broth
• 2 cups pumpkin, chopped
• 2 cups white kidney beans, cooked
• 1 tsp Prozis Turmeric Powder
• 1/2 tsp nutmeg
• 1 tsp salt
• Pepper to taste
Work your magic:
1. In a pot, heat the olive oil, add the onion, and cook over medium heat until translucent.
2. Add the garlic and sage. Fry for a few seconds.
3. Add the remaining ingredients, bring to a simmer, and cook for about 30 minutes.
4. Blend the soup and season to taste.
Golden tip: Garnish with pumpkin seeds and some coconut milk!
Ingredients:
• 100 g salted butter at room temperature
• 1 tsp Prozis Turmeric Powder
• 1 zucchini, sliced
• 1 lemon, sliced
• 1 large fillet of Australian White Fish (we used Ling fish)
• 1 cup cherry tomatoes, halved
• 1 cup cilantro, chopped
• Salt to taste
• Baking sheet
Work your magic:
1. Preheat a convection oven to 160°C.
2. Mix Prozis Turmeric Powder with butter until fully combined, and refrigerate.
3. On a large sheet of baking paper, layer pieces of lemon and zucchini and place the fish on top. Place pieces of butter on top of it along with the cherry tomatoes and the cilantro.
4. Fold the edges of the baking sheet over the fish and twist tightly. Place on a baking tray and cook for 15-20 minutes.
Golden tip: Wrap any leftover turmeric butter in plastic and store it in the fridge. Use it to season meat or to finish a risotto!
